Christian Gaffey on top of the Hill for his Trophy winning wines

Established in 1983, Jackson’s Hill is a small vineyard with its own operational winery in the Mount View region of the Hunter Valley. This boutique winery, with Tasting Panel Member Christian Gaffey at the winemaking helm, consistently produces outstanding regional and varietal wines and their recent wins at the 2011 Hunter Valley Boutique Winemakers Show are testament to that.

Christian is extremely proud of the winery’s achievement to date and to have taken out 3 Trophies is a nod to his extensive skills!

Wine of the month – Bethany Semillon 2008

Bethany Wines is one of the oldest established wineries in the Barossa, with the Schrapel family first planting vines back in 1852. The winery is still family owned and operated today, with fifth and sixth generation members of the family still making stunning wines like this Semillon, crafted by winemakers Geoff and Robert Schrapel. This particular wine is an excellent example of a Barossa Semillon, crafted from 40-year-old vines. It has a lifted nose of citrus with toast notes leading to a complex lemon and citrus zest palate ending with mouth-watering acidity and savoury length.

Linguine with basil and crispy pancetta

Serves 4

¼ cup pine nuts

1 bunch fresh basil leaves

2 small garlic cloves, diced roughly

¾ cup grated parmesan

5 tbsp olive oil

Salt and lemon to season

500g linguine

8 slices of pancetta, cut into strips

Extra parmesan to garnish

1. Put the pine nuts in an un-oiled fry pan and roast over a low heat until toasted. Set aside for 5 minutes to cool.

2. Place the pine nuts, basil, garlic and parmesan in the bowl of a food processor and process until finely chopped. With the motor running, gradually add the oil in a thin, steady stream until well combined. Season with salt and a squeeze of lemon.

3. Meanwhile, put four litres of well-salted water in a big saucepan to boil. When boiling, add linguine and cook until al dente.

4. Put a small amount of olive oil in a pan, when hot add pancetta pieces and cook until crispy. Put to one side.

5. Once linguine is cooked and drained, immediately combine pesto and linguine. Add crispy pancetta and mix, add grated parmesan then serve.
