Chocolate Souffle

Chocolate Souffle
Ingredients

Serves 4

  • 120g dark chocolate
  • 50g butter
  • 50g flour
  • 300ml milk
  • 50g sugar
  • 3 egg yolks
  • 4 egg whites
  • Icing sugar and butter for ramekins
Method
  • Grate the chocolate finely.
  • Melt the butter in a pan, stir in the flour and cook for a couple of minutes without browning.
  • Add the milk and bring to the boil, stirring. Stir in the chocolate and two thirds of the sugar. Remove the pan from the heat and allow to cool for five minutes.
  • Whisk the egg yolks and stir into the chocolate mixture.
  • Whisk the egg whites very stiffly and whisk in the rest of the sugar.
  • Stir three tablespoons of the beaten egg white into the chocolate mixture, then carefully fold in the rest.
  • Butter the inside of four ramekins and sprinkle with a little sugar, then fill with the soufflé mixture. Place soufflés on abaking tray and bake in preheated oven at 180ºC for 15-20 minutes or until soufflés are well risen.
  • To serve, place ramekins on plates and dust with icing sugar before serving.
