Fresh Berries with Vanilla Mousse

Ciabatta
Ingredients

Serves 6

  • 2 egg yolks
  • 100g castor sugar
  • 60ml Limoncello
  • 500g mascarpone
  • 1 egg white
  • 1 punnet raspberries
  • 1 punnet strawberries
  • 1 punnet blueberries
  • 2tbls caster sugar
  • Limoncello to serve
Method
  • Whisk egg yolks and sugar together for five minutes or until pale and thick. Add Limoncello and mascarpone and continue to whisk until well combined.
  • Whisk egg white until stiff peaks form and fold lightly into the mascarpone mixture.
  • Chill in refrigerator for two hours or until firm.
  • Combine the berries – the strawberries will have to be cut in half or quarters –depending on size. Toss with the sugar and let sit for 10 minutes before serving
  • Serve scoops of the mousse with the berries and a splash of Limoncello.
