Ingredients
Serves 6
- 2 egg yolks
- 100g castor sugar
- 60ml Limoncello
- 500g mascarpone
- 1 egg white
- 1 punnet raspberries
- 1 punnet strawberries
- 1 punnet blueberries
- 2tbls caster sugar
- Limoncello to serve
Method
- Whisk egg yolks and sugar together for five minutes or until pale and thick. Add Limoncello and mascarpone and continue to whisk until well combined.
- Whisk egg white until stiff peaks form and fold lightly into the mascarpone mixture.
- Chill in refrigerator for two hours or until firm.
- Combine the berries – the strawberries will have to be cut in half or quarters –depending on size. Toss with the sugar and let sit for 10 minutes before serving
- Serve scoops of the mousse with the berries and a splash of Limoncello.
