Ingredients
Preheat oven to 180ºC
- 250g fresh blueberries
- 250g raspberries
- 250g hulled strawberries
- 250g blackberries
- 1 lime, juiced
- 2 tbls honey, warmed
- 300ml thick cream
- 1 vanilla bean, scraped
Biscuits
- 1/3 cup castor sugar
- 1 lime, rind and juice
- 1/2 cup plain flour
- 1 egg white
- 50g unsalted butter, melted
Method
- In a ceramic bowl, mix the berries, lime juice and warmed honey - set aside.
- Whisk together the cream and scraped vanilla bean seeds until soft peaks form and refrigerate, covered with clingwrap.
- For the biscuits, whisk in a large bowl the castor sugar, lime juice and rind; slowly whisk in flour, egg white and melted butter.
- Line a large baking tray with paper and place a tablespoon measure of the mixture onto the tray. Bake for 10-15 minutes or until golden. Leave to cool
- On the trays before serving, dusted with a little icing sugar.
- To serve, place a spoonful of cream in a shallow bowl, followed by a gentle spoonful of berries and top with a lime biscuit.
