Ingredients
Serves 4
- 2 tbls peanut oil
- 600g beef fillet, in one piece
- 1 tsp red curry paste
- 500ml coconut milk
- 1 tbls fish sauce
- 1 tbls palm sugar (or brown sugar)
- ½ bunch coriander, roughly chopped
- 2 kaffir lime leaves, finely shredded
- ½ red chilli, finely sliced
Method
- Heat oil in a pan or wok and sear beef for 1 minute on each side - remove and rest for five minutes, then slice finely.
- Add red curry paste to wok and fry for one minute.
- Pour in coconut milk, bring to the boil, and add beef, fish sauce and palm sugar. Cook for one minute.
- Spoon onto a serving plate and garnish with coriander, kaffir lime leaves and chilli.
- Serve with steamed jasmine rice.
