Beef Choo-Chee

Ciabatta
Ingredients

Serves 4

  • 2 tbls peanut oil
  • 600g beef fillet, in one piece
  • 1 tsp red curry paste
  • 500ml coconut milk
  • 1 tbls fish sauce
  • 1 tbls palm sugar (or brown sugar)
  • ½ bunch coriander, roughly chopped
  • 2 kaffir lime leaves, finely shredded
  • ½ red chilli, finely sliced
Method
  • Heat oil in a pan or wok and sear beef for 1 minute on each side - remove and rest for five minutes, then slice finely.
  • Add red curry paste to wok and fry for one minute.
  • Pour in coconut milk, bring to the boil, and add beef, fish sauce and palm sugar. Cook for one minute.
  • Spoon onto a serving plate and garnish with coriander, kaffir lime leaves and chilli.
  • Serve with steamed jasmine rice.
