Ingredients
- 600g Eye Fillet Beef
- 2 tbsp butter
- 2 ½ cups mushrooms, diced
- 180g True Blue Cheese or Blue Castello
- 1 bunch Bok Choy, stalks and greens separated and sliced
Method
- Seal the beef fillet in a hot pan or over a griddle plate. When sealed, place in the oven at 190ºC for 10 minutes.
- Melt the butter in the pan, and toss through the mushrooms until golden.
- Crumble through half the blue cheese and stalks of the Bok Choy. Serve the beef sliced with mushrooms over a bed of mashed potato and the remaining cheese. Accompany with steamed Bok Choy greens.
