Italian Meatballs Al Forno

Ciabatta
Ingredients

Pre-heat oven to 180ºC

Serves 6

    For the Meatballs

  • 500g lean mince
  • 4 cloves garlic, finely chopped
  • 1 small red capsicum, charred, seeds removed and finely chopped
  • 2 tsp dried oregano
  • 1 egg yolk
  • ¼ cup flour
  • ¼ cup olive oil
  • 2 cups prepared tomato pasta sauce
  • 375g penne, cooked to al dente and drained
  • ¼ cup each of grated cheddar cheese and Parmesan cheese
Method
  • Make the meatballs by combining the meat, garlic, capsicum, and oregano and egg yolk. Shape into small balls then roll in flour; fry the meatballs in olive oil until golden all over.
  • Combine sauce with the pasta and meatballs. Transfer to a baking dish, top with cheeses and bake for 15 minutes or until golden.
