Ingredients
Pre-heat oven to 180ºC
Serves 6
For the Meatballs
- 500g lean mince
- 4 cloves garlic, finely chopped
- 1 small red capsicum, charred, seeds removed and finely chopped
- 2 tsp dried oregano
- 1 egg yolk
- ¼ cup flour
- ¼ cup olive oil
- 2 cups prepared tomato pasta sauce
- 375g penne, cooked to al dente and drained
- ¼ cup each of grated cheddar cheese and Parmesan cheese
Method
- Make the meatballs by combining the meat, garlic, capsicum, and oregano and egg yolk. Shape into small balls then roll in flour; fry the meatballs in olive oil until golden all over.
- Combine sauce with the pasta and meatballs. Transfer to a baking dish, top with cheeses and bake for 15 minutes or until golden.
