Roast Beef with Yorkshire Pudding
Ingredients

Serves 4

  • 1kg roast beef
  • 3 tbls olive oil
  • 1 garlic bulb, broken into cloves
  • 6 sprigs of rosemary
  • 4 large potatoes, quartered
  • 250mls milk
  • 100g flour
  • 3 eggs
  • pinch of salt
  • vegetable oil
Method
  • Brown beef on all sides in hot olive oil until golden brown.
  • Cook beef, surrounded by unpeeled garlic cloves, rosary and potatoes in a moderate oven for 1½ hours. Remove and rest for 10 minutes.
  • Increase the oven temperature to 200ºC and whisk together milk, flour, eggs and salt to taste. Rest for 10 minutes. Preheat a muffin tin with ½ cm oil in each section for 10 minutes. Fill tins with batter and cook for 15 to 20 minutes or until golden and puffy.
  • Serve sliced beef, potatoes and Yorkshire puddings drizzled with pan juices.
