Ingredients
Serves 4
- 1kg roast beef
- 3 tbls olive oil
- 1 garlic bulb, broken into cloves
- 6 sprigs of rosemary
- 4 large potatoes, quartered
- 250mls milk
- 100g flour
- 3 eggs
- pinch of salt
- vegetable oil
Method
- Brown beef on all sides in hot olive oil until golden brown.
- Cook beef, surrounded by unpeeled garlic cloves, rosary and potatoes in a moderate oven for 1½ hours. Remove and rest for 10 minutes.
- Increase the oven temperature to 200ºC and whisk together milk, flour, eggs and salt to taste. Rest for 10 minutes. Preheat a muffin tin with ½ cm oil in each section for 10 minutes. Fill tins with batter and cook for 15 to 20 minutes or until golden and puffy.
- Serve sliced beef, potatoes and Yorkshire puddings drizzled with pan juices.
