Pork & Crab Patties

Ingredients

Serves 4

  • 185g minced pork
  • 125g crab meat
  • 2 tablespoons finely chopped onion
  • 2 tablespoons finely chopped coriander
  • 2 tablespoons finely chopped roasted peanuts
  • 2 teaspoons red curry paste (Thai)
  • ½ teaspoon salt
  • 2 teaspoons fish sauce
  • 2 tablespoons thick coconut cream
Method
  • Mix the pork, crab, onion, coriander & peanuts
  • Combine the curry paste, salt, fish sauce and coconut cream – this ensure all ingredients are mixed well before adding to the pork mixture
  • Stir in the coconut mixture into the pork and mix well
  • Shape the mixture into equal size patties and pan fry or grill until cooked
  • Serve as they are or with a soy dipping sauce
