Ingredients
- 1 punnet strawberries (250g) strawberries, hulled and halved
- 1 tablespoon balsamic vinegar (an aged vinegar will give a better result)
- 1 red capsicum, roasted, skinned & sliced
- 1 yellow capsicum, roasted, skinned &; sliced
- 1 bunch baby rocket
- 12 slices prosciutto
- 2 tablespoons extra virgin olive oil
Method
- Place strawberries and balsamic vinegar in a bowl and allow to marinate for 10 minutes. Remove strawberries from marinade, reserving the balsamic vinegar.
- Arrange strawberries on entree plates with capsicum slices, rocket and prosciutto.
- Whisk oil into reserved vinegar and drizzle over strawberries and serve with slices of toasted bread or Boccaccio.
