Ingredients
Serves 4
- 4 x 160g pieces Atlantic salmon
- Freshly cracked black pepper
- sea salt to taste
- ¼ cup white wine
For the Mango Salsa
- 1 fresh mango
- 1 small Spanish onion
- 1 Lebanese cucumber
- 1 bunch chives
- 1 tbls red wine vinegar
Method
- Place one piece of salmon on a sheet of baking paper. Bring up the sides of the paper, season the fish with salt and pepper and then add a little wine. Seal up the pouch and place in a baking dish. Repeat with remaining salmon.
- Bake for 20 minutes or until just cooked.
- Make the salsa by finely chopping all mango, onion, cucumber and chives. Mix with the vinegar and serve over the salmon
