Salmon Oily Fish Recipes

Slow Baked Salmon with Mango Salsa

Ciabatta
Ingredients

Serves 4

  • 4 x 160g pieces Atlantic salmon
  • Freshly cracked black pepper
  • sea salt to taste
  • ¼ cup white wine

    For the Mango Salsa

  • 1 fresh mango
  • 1 small Spanish onion
  • 1 Lebanese cucumber
  • 1 bunch chives
  • 1 tbls red wine vinegar
Method
  • Place one piece of salmon on a sheet of baking paper. Bring up the sides of the paper, season the fish with salt and pepper and then add a little wine. Seal up the pouch and place in a baking dish. Repeat with remaining salmon.
  • Bake for 20 minutes or until just cooked.
  • Make the salsa by finely chopping all mango, onion, cucumber and chives. Mix with the vinegar and serve over the salmon
