Ginger Scallops

Ginger Scallops
Ingredients

Serves 4

  • 12 Scallops in the shell
  • 1 tsp Extra Virgin olive oil
  • 1 tsp Mirin sweet Japanese rice wine
  • 1 cm ginger, finely grated
  • Freshly ground sechuan pepper or black pepper
  • Rocket, for serving
Method
  • Place the scallops in the shell on a grill rack.
  • Combine the olive oil, mirin, ginger and pepper, then spoon over the scallops. Place under a very hot grill and cook for 2 minutes or until just cooked through.
  • Serve in the shells on a bed of rocket
