Ingredients
Serves 4
- 3 tbls peanut oil
- 2 cloves garlic, finely chopped
- 3 spring onions, thinly sliced
- 1 tsp chilli paste
- 200g chicken breasts, sliced
- 100g prawns, peeled
- 150g flat rice noodles, cooked or fresh
- 2 tbls thick soy sauce
- 1 egg, beaten
- 150g Asian green vegetables (bok choy or similar), chopped
- ½ cup bean sprouts (Optional)
- Chopped spring onions and red chilli for garnish
Method
- Heat oil in a wok and stir fry garlic, spring onions, chilli paste and chicken for 5 minutes or until chicken is cooked through.
- Add prawns, noodles and soy sauce then stir fry over medium heat until combined.
- Pour in beaten egg and stir until noodles are coated.
- Add Asian greens and bean sprouts. Cook for a further minute.
- Serve hot, garnished with spring onions and chilli if desired.
