Fruit for this Cabernet was de-stemmed, cold soaked in an open fermenter and after a long skin contact was pressed into French oak where it underwent malo-lactic fermentation. It was matured for 20 months and received minimal intervention.
This 2011 vintage Vat 9 Shiraz is a blend of Tyrrell’s top vineyards, sourced from the red volcanic soil strip that runs through the Weinkeller, NVC and Short Flat Vineyards, with an average vine age of 50 years.
Yarra Yering make their wines to age and profess that “faithful expression of the vineyard is of paramount importance”. These qualities shine through in this Cabernet Merlot, which at seven years old is still vibrant, but has lovely aged characters.
