Fruit Based Recipes
Summer fruit galette
Ingredients
1 sheet butter puff pasty
3 mangoes
3 tsp sugar
1 tbsp apricot jam
Thick Greek style yoghurt or cream, to serve
Method
1. Pre-heat oven to 220ºC (200ºC fan-forced).
2. Cut pastry into 6 even rectangles.
3. Slice fruit thinly and lay on top of pastry, sprinkle with sugar and bake until golden, around 15–20 minutes.
4. Warm the apricot jam with a tablespoon of water in the microwave or saucepan. Sieve it to remove lumps and brush over the fruit while still warm.
5. Serve with thick yoghurt or cream topped with a sprig of mint, if desired.
