Featuring hand picked Chardonnay and Pinot Noir fruit from the Adelaide Hills, this Sparkling was produced using the traditional Methode Traditionelle, resulting in a wine of great complexity.
Bright mid yellow in colour, on the nose it displays a nutty, savoury mix of fruit and lees with a touch of honey, lanolin and aldehyde complexity. The fresh palate has creamy layers of stonefruit, vanilla, wild honey and spice underpinned by complex yeast autolysis and a clean acid finish. A very complete wine with excellent acidity, complexity, length and balance.
