Laurent Delaunay is a passionate winemaker and specialist in Languedoc wines. Her Abbotts & Delaunay winery in the South of France was originally set up by Australian winemaker, Nerida Abbott.
Picked at the peak of maturity, 60% of the grapes for this Carignan were vinified in whole bunches while 40% underwent traditional vinification before maceration. Racked after fermentation, the wine underwent malolactic fermentation then barrel maturation.
A rustic nose showing faint meaty European notes over earth, licorice and plummy spice leads to a palate with fleshy dark fruit power, a velvety mouthfeel and savoury layers of dark berry, licorice, graphite, dried herbs, tobacco and earth. The supple tannins provide delicious texture and persistence.
