This varietal Cabernet is the culmination of the dedication of Andrew Nugent since he planted the Bird in Hand vineyard and olive grove across 100 acres of rich, fertile ground in the Adelaide Hills in 1997.
Produced from selected, low-yielding blocks on Bird in Hand’s Adelaide Hills estate, the fruit for this Cabernet by Kim Milne MW underwent extended maceration on skins prior to pressing off to maturation in a mixture of new and used French oak for 18 months.
Sweet red berry, plum, cassis and toasty, smoky oak aromas introduce a very youthful, generous and intense palate with tight layers of varietal dark cherry and blackcurrant, hints of mint and spice and bright cool climate acidity. A tight tannin structure and quality supporting cedary oak ensure patience will be rewarded in the cellar.
