Andrew Koerner of Blue Pyrenees used the 'methode champenoise' to craft this Sparkling, which is time-consuming and expensive, but results in beautiful wines like this Vintage Brut.
In the glass: Medium lemon straw with a fine bead.
On the nose: Savoury, mealy lift of sourdough over wet stone.
On the palate: Shows beautiful texture throughout – savoury and crisp with a fine creamy mousse, layers of stonefruit and brioche and complex, leesy flavour persistence.
