Carillion owner John Davis is a geologist, and as most winemakers say, it’s all about the soil! John identified this area in Orange as having perfect soil for many varieties, especially those that love cool climates.
In the glass: Deep red.
On the nose: Blackcurrant, cassis and mulberry with bay leaf and tobacco notes - pure Cabernet.
On the palate: Powerful and expressive with a solid and deep core of black fruits with dark chocolate, crushed leaf notes and fine yet prominent tannins. A classic in the making - almost like a Bordeaux from a good ripe vintage. We suggest you decant first or put it in the cellar for a while.
