Carillion The Volcanics Cabernet Sauvignon 2016

Carillion owner John Davis is a geologist, and as most winemakers say, it’s all about the soil! John identified this area in Orange as having perfect soil for many varieties, especially those that love cool climates.
 
In the glass: Very dense red black.
On the nose: Loads of fresh blackberry and cassis with terrific currant and prune-like density and deluxe oak spice.
On the palate: Dense and flavour-packed with a curranty core providing richness and length. Tannins are fine and deep, with redcurrant-like acidity and good structure throughout.
