Dan Binet is one of the more experimental winemakers in the Hunter Valley. In this instance he is also using fruit from NSW's Hilltops to create this interesting wine.
Pale straw. Lifted stonefruit, lemon, lime, rose water and green apple. Gentle and mouth-watering with citrus core depth, touches of lychee and nectarine, fresh acidity and a zesty finish.
