With 225 hectares of estate-grown fruit grown in the isolated but rapidly emerging cool-climate Frankland River region of Western Australia's Great Southern to pick from, award-winning winemaker Kim Horton is able to craft very special wines.
Following a cold soaking, the fruit for this Cabernet was fermented for eight days where a combination of pumping over and plunging assisted the extraction of tannin and flavour, prior to post ferment maceration and careful pressing. The wine was racked to new French oak, where it underwent malo-lactic fermentation and 20 months maturation.
Ripe black fruit, leather, cigar box and cedary oak aromas lead to a palate with rich blackberry fruit, a leather and spice complexity and firm tannins in a well-balanced style.
