Flying Fish Cove Prize Catch Chardonnay 2012

Prize Catch Chardonnay Gin-Gin clone fruit was handpicked and following pressing the juice was rough settled before being transferred to new French oak barriques for fermentation. The barrels were regularly stirred on lees to
breed further texture and complexity and matured in barrel for a further eight months.
 
A superb wine, it opens with lifted pineapple, ozone and oyster shell aromas backed by rich cream biscuit characters derived from deluxe oak and lees complexity. The palate shows a wonderful richness and harmony of pineapple, sea salt, cashew and spice finishing with amazing length and persistence.
