At Gapsted Wines, the Prosecco is picked early and green to keep the fresh zesty fruit of the less-than-ripe grapes. It is fermented cold then left on lees to acquire some weight and finesse to preserve the delicate pristine aromas.
Crafted by Michael Cope-Williams, the Tobacco Road Sparkling Prosecco is pale lemon green in the glass and opens with aromas of lifted lemon zest and earthy notes. Tight, crisp and bone-dry, the palate offers a fine bead and zesty core of lemony fruit and fruit tingle-like acidity. It finishes with savoury length and is fantastic served as an aperitif or with simple, unadorned seafood.
