Fruit for this Chardonnay was hand picked, whole-bunch pressed and racked straight to barrel. A portion underwent a natural fermentation with indigenous yeasts, the balance inoculated with a Burgundian yeast strain. 30% of the barrels underwent malolactic fermentation and the wine was matured on lees for 10 months before final assemblage and bottling.
This Chardonnay opens with aromas of fresh lemon, honey and peachy fruit over creamy oak. The palate is tight with layers of citrus, honeydew melon and nectarine varietals, smokey oak and grilled nut complexity. Very youthful and fresh, poised and balanced with an oyster shell-like minerality.
