The juice was wild fermented by naturally occurring yeast before maturing in both new and old French oak barrels for ten months with occasional stirring to produce texture.
In the glass: Pale to mid gold.
On the nose: Lime fruit lift and fresh toasty oak.
On the palate: Nectarine, ripe pear, pineapple and ginger, along with spicy oak complexity, hints of developing cashew and minerally acidity that drives the long finish.
