Sevenhill is Australia’s only Jesuit-owned winery and the Inigo range, including this heavenly Cabernet, is named after the founder of the Jesuits, St. Ignatius.
A brooding nose of jammy black fruits, coffee, liquorice and toasty oak precedes a rich palate of real muscle that’s showing savoury cassis and leather development under still-fresh minty varietals. A well developed, lovely drink now with a supple toasty oak background and fine powdery tannins.
