Amazing dairy-free chocolate mousse and yoghurt granita

INGREDIENTS

  • 300g 70% chocolate, broken
  • 30g pure icing sugar
  • 75g water
  • 175g ice cubes

Yoghurt granita

  • 25g pure icing sugar
  • 75g yoghurt
  • 200g ice cubes

METHOD

  1. For granita: place all ingredients in Thermomix bowl, cover and blitz on speed 9 for one minute. Scrape down half way to ensure it is a smooth texture. Place in freezer. Remove 5 minutes prior to serving and fork over for granita consistency.
  2. For chocolate mousse: Place chocolate in the Thermomix bowl, cover and crush on speed 9 for 5 seconds. Add icing sugar and water. Choose 50ºC temperature and cook on speed 3 for 3–4 minutes or until the chocolate is melted. Scrape down after one minute to check. Turn off heat and add the ice cubes. Mix on speed 4 to break up. Increase speed to 9 and process for a minute. Scrape down. Repeat a minute at a time until you have a mousse-like consistency. It will take around 4–5 minutes. Scrape out and put in the fridge until serving time.
  3. Scrape out and serve immediately or put in the fridge until serving time.
