Scrape down half way to ensure it is a smooth texture. Place in freezer. Remove 5 minutes prior to serving and fork over for granita consistency. For chocolate mousse: Place chocolate in the Thermomix bowl, cover and crush on speed 9 for 5 seconds. Add icing sugar and water. Choose 50ºC temperature and cook on speed 3 for 3–4 minutes or until the chocolate is melted. Scrape down after one minute to check. Turn off heat and add the ice cubes. Mix on speed 4 to break up. Increase speed to 9 and process for a minute. Scrape down. Repeat a minute at a time until you have a mousse-like consistency. It will take around 4–5 minutes. Scrape out and put in the fridge until serving time. Scrape out and serve immediately or put in the fridge until serving time.
