Barbecue split prawns with chilli, oregano and olive oil

Ingredients

  • 16 king prawns butterflied from underneath
  • ½ cup extra virgin olive oil
  • 1 tbsp dried oregano
  • 1 tbsp chopped fresh oregano leaves
  • 1 tbsp dried chilli flakes
  • Sea salt & cracked black pepper

Method

  1. Mix the olive oil with the oregano, chilli and seasoning and brush over the flesh of the prawns. Place the prawns shell side down on the barbecue and cook for 3 minutes, then turn over and cook for a further 30 seconds.
  2. Take off the heat and brush more of the dressing over the prawn flesh and serve.
