When it comes to celebrating, a platter of cheese, fruit, crackers and Chris’ Heritage Edam & Fig Savoury dip is the Perfect summer serving.

Figs have long been associated with sharing and celebration. Figs are one of the foods eaten at the end of the Yom Kippur fast in Jewish tradition,  and were one of the few foods allowed to be eaten during Christian religious fasts in the Middle Ages.

The sweet sensual flavour of fig is perfect for antipasto platters as it provides a delicious balance to the savouriness of the meats and a counter point to creamy cheeses. Perfect partners

Originating in the Netherlands, Edam is a semi-hard cheese made from cow or goats’ milk that has a creamy texture and mild, mellow flavour when young. Left to age, it intensifies with bold nutty characters with a hint of salt.

Edam is the perfect cheese to pair with rich fruit, which is why Chris’ Heritage Edam & Fig dip is such a culinary masterstroke. The creaminess of the Edam cheese is balanced by the sweetness of fig and is further enhanced with hints of fennel and roast almond. A sachet of crushed roasted almonds is also included with the dip to garnish and serve, and like the entire Heritage Range, it comes in a reusable terracotta pot.

“Italian varietals such as Fiano or Vermentino would work really well with this dip,” he says. “The Vermentino in particular has characters of grapefruit, green apple, almonds and hints of briny minerality that will pair perfectly with the sweetness of the fig, the salt elements of the Edam and the roasted almonds.”

Re-invent apricot chicken by blending onion soup with half a pot of Edam & Fig dip as the sauce. Invigorate a chicken Caesar wrap by using the dip as a flavoursome spread, or add two tablespoons of the Edam & Fig dip when whisking the eggs for an indulgent vegetable frittata.
