Combine the thyme leaves, scraped seeds of the vanilla bean and castor sugar in a mortar and pound until fine. Scatter on a lined tray, then set aside to dry. Mix with the icing sugar. 2. Arrange the fruits on plates, dust with the flavoured icing sugar, then drizzle with extra virgin olive oil and scatter with lemon balm leaves.
