Fresh Figs with Blue Cheese & Prosciutto

INGREDIENTS

  • 18 green or black figs
  • 125g blue cheese, diced
  • 18 very thin slices of prosciutto
  • Extra virgin olive oil
  • Freshly ground black pepper

METHOD

  1. Make two cuts across the top of the figs and push from the base to open the fig like a flower. Stuff with a piece of blue cheese and place on a serving platter.
  2. Drape prosciutto across and around the stuffed figs. Drizzle with extra virgin olive oil, dust with black pepper and serve immediately.
