Ginger pork patties

Ingredients

  • 400g pork mince
  • 100g firm tofu, finely diced
  • 1 large onion, finely diced
  • 3 eggs
  • 1 tsp grated ginger
  • 2 tsp soy sauce
  • Pinch salt and pepper
  • 1 tsp sugar
  • 2 garlic cloves, crushed
  • ¼ cup plain flour
  • Vegetable oil for shallow frying

Dipping sauce

  • 2 tbsp soy sauce
  • 2 tbsp white vinegar
  • 2 tbsp water

METHOD

  1. Combine pork mince, tofu and onion in a large bowl. Add 1 egg and mix thoroughly, and then add ginger, soy sauce, salt and pepper, sugar and garlic.
  2. Using slightly damp hands, form mixture into walnut-sized balls. Clap hands together gently with patty to make a perfect patty shape. Coat in flour, and then dip into remaining beaten egg.
  3. Pour oil into a frypan until 1cm deep. Heat over medium heat until hot. Cook patties in batches for 4 minutes one side, then 3 minutes on the other, or until cooked through. Serve with dipping sauce.
  4. For dipping sauce, combine all ingredients in a jar, shake.
