Green Butter Beans Goats Cheese Pecans And Walnut Dressing Recipe

Green butter beans, goats cheese, pecans and walnut dressing

  • 100g green beans, topped and tailed
  • 100g butter beans, topped and tailed
  • 100g goat’s cheese (either firm or soft curd)
  • 60g pecans, roughly crumbled
  • Mint sprigs for decoration

For the dressing

  • 2 tbsp walnut oil
  • 1 tbsp extra virgin olive oil
  • ½ tsp dried wasabi powder
  • 2 tbsp red wine vinegar
  • Salt to taste


  1. Blanch and refresh beans and keep cool.
  2. Make the dressing by whisking the oils with the wasabi. When combined, whisk in the vinegar and salt to taste.
  3. Assemble by piling amounts of each of the beans into the centre of largish plates. Top with equal amounts of cheese (spoon on curd if using or dice/crumble firm cheese if you prefer).
  4. Spoon over the dressing, sprinkle on the pecan and top with mint
