INGREDIENTS

  • 300g Manchego cheese
  • 300g plain flour
  • 8 eggs, beaten lightly
  • 300g panko breadcrumbs
  • Oil for shallow frying
  • Salt and pepper
  • Tomato jam, to serve

METHOD

  1. Cut manchego cheese into fingers.
  2. Dust cheese fingers in flour. Dip fingers in egg, then panko. Repeat twice. Ensure the ends are well coated.
  3. Heat oil in a frypan over medium heat. Shallow fry fingers for 1-2 minutes each side or until golden. Drain on absorbent paper. Season with salt and pepper.
  4. Serve with tomato jam.
