Mini Japanese pancakes

INGREDIENTS

  • ½ cup plain flour
  • 1 tsp baking powder
  • ¼ tsp chilli powder
  • ¼ tsp each of salt and white pepper
  • 4 eggs
  • 2 tbsp Obento Sushi Seasoning
  • ½ cup finely shredded white cabbage
  • 3 green shallots, trimmed and finely chopped
  • ½ cup daikon, peeled, finely grated
  • 1 carrot, peeled, finely grated
  • 2 tbsp vegetable oil
  • Kewpie Mayonnaise, micro herbs and Obento
  • Pickled Ginger, to serve

METHOD

  1. Sift flour, baking powder, chilli powder, salt and pepper in a bowl. Lightly whisk eggs and Obento Sushi seasoning together. Make a well in the centre of the flour mixture, add eggs and seasoning; stir until smooth batter forms. Add cabbage, shallots, daikon and carrot. Stir to combine.
  2. Heat oil in a large frypan over medium heat. Working in batches, ⅓ cup of batter into the pan and cook for 3-5 minutes each side or until golden and cooked through.
  3. To serve, top each pancake with strips of kewpie mayonnaise, micro herbs and serve with Obento pickled Ginger.
