Minted Prawn Orange Salsa Recipe

Minted prawn and orange salsa

  • 24 medium sized cooked prawns, shell removed
  • 2 tbsp orange juice
  • 1 cup washed, crisped mint leaves
  • Grated zest of 1 orange; remove remaining skin of orange and cut the flesh into even dices
  • 1 small sweet green chilli, finely chopped
  • 1 tsp green tabasco
  • ½ tsp sugar
  • 2 tbsp vegetable oil
  • 8 medium sized Cos lettuce leaves, crisp and chopped for salad
  • ¼ cup chopped, roasted, salted cashews


  1. Mix prawns, orange juice and mint leaves together. Tumble and sit for 20 minutes.
  2. Mix the zest, orange dice, chilli, tabasco, sugar and oil together and let sit for 10 minutes.
  3. Spread the chopped cos lettuce on to a dinner plate and spoon on the salsa; top with equal amounts of prawn.
  4. Sprinkle the nuts on evenly and serve immediately.
