Salt & pepper spanner crab

INGREDIENTS

  • Extra virgin olive oil
  • 1 clove garlic, sliced
  • 200g Queensland CEAS spanner crab meat (raw)
  • 100g egg white
  • 15ml Chinese rice wine
  • 1⁄2 tsp cracked pepper
  • Spring onion to garnish

Salt and pepper seasoning

  • 1⁄2 tsp ground white pepper
  • 1 tsp five spice
  • 2 tsp salt
  • 3 tsp sugar

METHOD

  1. Heat frying pan, add olive oil and garlic. Cook until garlic turns very light brown.
  2. Add crab meat and stir until crab turns white and separates.
  3. Mix egg white and rice wine together, add into the side of the pan. Mix as you would for scrambled eggs.
  4. Sprinkle a little salt and pepper seasoning onto crab mixture and toss through. Add more seasoning to taste.
  5. Serve on plate with spring onion slices and cracked pepper on top.
