Scrambled eggs with spanner crab

Ingredients

  • 5 eggs
  • 30g grated parmesan cheese
  • Extra virgin olive oil
  • Small clove garlic, sliced
  • 200g Queensland CEAS spanner crab meat (raw)
  • 60g ricotta
  • Salt and pepper to taste

Method

  1. Quickly mix eggs and parmesan cheese together in bowl.
  2. Heat olive oil in a hot pan with sliced garlic. Add raw spanner crab meat. Stir quickly to cook through.
  3. Pour egg and parmesan over crab meat. Add ricotta.
  4. Stir quickly. Add salt and pepper to taste.
  5. Serve with a side salad of grape tomatoes, rocket and parmesan slices.
