This delicious recipe by Melbourne Chef Shane Delia is best paired with a lighter-bodied, rustic red like a Shiraz Grenache Tempranillo blend (GSM). It is a beautifully savoury choice. Crunchy red fruit, super-fine tannins and earthy complexity make it a must-have.

Ingredients

2 smoked eggplants 

200g yoghurt 

50g tahini 

1/3 bunch parsley, picked and chopped 

Juice of half a lemon 

Salt 

Method

1. Roughly chop the smoked eggplant and place into a mixing bowl.

2. Add remaining ingredients and mix well. 

3. Check season, if necessary, add more salt or lemon juice. 

4. Place eggplant onto serving dish.
