Shane Delias Smoked Eggplant
with St David's Yoghurt, Tahini and Herbs

2 smoked eggplants
1/3 bunch parsley, picked and chopped
Juice of half a lemon

1. Roughly chop the smoked eggplant and place into a mixing bowl.
2. Add remaining ingredients and mix well.
3. Check season, if necessary, add more salt or lemon juice.
4. Place eggplant onto serving dish.
