Winter really is the season of the one-pot wonder, a wonderfully hassle-free way to prepare a delicious, savoury meal that is ideal for families and feeds the soul.

At Wine Selectors, we’re big fans of the rich flavours that develop over a number of hours on the stove or in the oven, and we want to share some of our favourite slow cooked recipes and their perfect wine pairings with you.

Featuring slow cooked chicken, duck, lamb, veal, beef, fish and vegetable, these recipes are versatile and flavour-packed. And, naturally, any slow cooked meal takes on another dimension when paired with a wine that complements its distinct qualities!

 

COQ AU VIN

A French staple where the chicken is slow cooked in wine with mushrooms and other delectables (the name literally means rooster in wine), Coq au Vin is best matched with a light red or rich white for a pairing that – like the best slow cooked meals -  is so, so much greater than the sum of its parts.

BRAISED DUCK WITH BOK CHOY & SHIITAKE MUSHROOMS

Prepare yourself for a Chinese braised duck extravaganza. With its dark soy, ginger, star anise, oyster sauce and shitake mushrooms, this slow cooked duck recipe is absolutely delicious. Pair it with a perfumed Aussie Pinot Noir and serve it with beautiful green bok choy and jasmine rice, or create simple duck pancakes.

Wine match: Pinot Noir or Rosé

 

OSSO BUCCO

An easy to make specialty of Lombard cuisine, Osso Bucco is an Italian slow food superstar packed with flavour, yet textural and complex, making it ideal to enjoy with wines that share similar attributes. Our suggestion? Go with medium weight, savoury reds for an optimal flavour experience.

Wine Match: Barbera, Sangiovese or Tempranillo

 

VEAL AND MUSHROOM RAGU WITH PAPPARDELLE

Cooked slow and low with a mix of rich meaty mushrooms including porcini, Swizz browns and button mushroom, this veal and mushroom ragu is a real winter warmer. Serve it with a pile of pappardelle and a glass or two of Barbera to create a fabulous feast guaranteed to please.

Wine Match: Barbera, Grenache or Pinot Noir

 

BRAISED LAMB SHANKS

A genuine slow cooker sensation, braised lamb shanks are a much-loved meal that lends itself to the more tannic red varieties, as the tannins give a nice and robust foundation to balance the fattier cuts of meat that are at the heart of this dish. For something a little different, try this North African take on the traditional lamb shanks.

Wine match: Cabernet Sauvignon, Shiraz or Malbec

 

SLOW ROASTED LAMB SHOULDER WITH YELLOW CURRY PASTE AND PICKLED GINGER

The use of Asian ingredients (yellow curry paste, fish sauce, pickled ginger, coconut milk, palm sugar and coriander) take a very Aussie piece of lamb and make it a delicious and exciting new culinary adventure - slow roasted lamb shoulder with yellow curry paste and pickled ginger!

Wine match: Tempranillo, Cabernet Sauvignon or Cabernet Merlot

 

Slow cooked beef cheek with cauliflower pureé

Match Shiraz, Durif or Malbec with the rich, fatty flavours of slow cooked beef cheek for a mouth-watering and deeply satisfying pairing.

Wine match: Barbera, Sangiovese or Tempranillo

 

BRAISED OXTAIL WITH ITALIAN FLAVOURS

Slowly braising this oxtail recipe with italian flavours in a covered pan or in low temperature oven for three hours, means the meat will just fall off the bone and melt in your mouth. A deliciously rich and rustic dish.

Wine match: Shiraz, Malbec or Tempranillo

 

Slow Baked Salmon and sparkling Oyster Cream

This is a slow cooked fish dish that incorporates the luxurious creaminess of oyster creme fraiche sauce and firm salty salmon ceviche – perfect with a Sparkling white or for red wine lovers, pour yourself a Pinot Noir.

Wine match: Pinot Noir, Nero d’Avola or Chardonnay, Sparkling white

 

TETSUYA WAKUDU’S SLOW ROASTED SNAPPER WITH OLIVE, CAPERS AND TOMATO

The Mediterranean elements in this stunning slow cooked seafood dish really lend themselves to Rosé. A palate is sweet and savoury element make it the perfect pairing for the fine, umami-rich flavours in this dish.

Wine match: Chardonnay, Vermentino or Rosé

 

COUSCOUS STUFFED PUMPKIN

Could roasted pumpkin get any better than this slow cooked, couscous stuffed creation? Perfect as a vegetarian meal paired with an aromatic Viognier, creamy Chardonnay or savoury Sangiovese.

Wine match: Viognier, Chardonnay or Sangiovese

 

SALT BAKED BEETROOT

This slow cooked vegetable dish brings out the beautiful earthiness of the beetroot and other root vegetables, while the brown-butter and goats cheese add even more richness. Merlot is a perfect red wine match, while Sauvignon Blanc and Pinot Gris are great white wine choices.
