Soba noodles with seared beef fillet, chilli and shiitake mushrooms

  • 270g Hakubaku Soba Noodles
  • 1 tsp chilli, finely chopped
  • ¼ cup Obento Rice Wine Vinegar
  • 2 tsp Obento Mirin Seasoning
  • 2 tsp fresh ginger (finely chopped)
  • ¼ cup olive oil + 2 tbsp extra
  • 500g beef eye fillet
  • 100g fresh or cultivated shitake mushrooms (stalks removed and finely sliced)
  • ¼ cup basil leaves


  1. Combine chilli, rice wine vinegar, Mirin, ginger and oil and pour over eye fillet. Marinate for 30 minutes.
  2. Heat oven proof fry pan on high heat. Reserve marinade, remove fillet and sear in fry pan for 1 minute each side.
  3. Place in preheated 200°C oven and roast for 15 minutes until medium done. Cover meat in aluminium foil and rest for 10 minutes.
  4. Cook Soba Noodles as per packet instructions.
  5. Heat extra olive oil in a frypan on medium heat. Stir fry mushrooms for 5 minutes, then reduce heat and add reserved marinade.
  6. Turn off heat, add noodles and toss to coat well. Serve noodles with slices of fillet and basil on top.
