Spanner crab risoni

INGREDIENTS

  • Olive oil
  • 1 small clove garlic, sliced
  • Pinch of chilli flakes
  • 3⁄4 punnet of grape tomatoes, cut in half
  • 200g Queensland CEAS spanner
  • crab meat (raw)
  • 200g risoni, cooked
  • Small bunch of Italian parsley,
  • roughly chopped
  • 4 soft poached eggs
  • 50g parmesan cheese

METHOD

  1. Heat oil on high, add garlic, chilli flakes and tomatoes, cook quickly.
  2. Add crab meat until just cooked. Add risoni and continue to toss quickly. Toss parsley through.
  3. Plate the spanner crab risoni and make a well in the centre.
  4. Place poached egg in the centre. Garnish with shaved parmesan cheese.
