Sydney rock oysters with ginger and shallot dressing

INGREDIENTS

  • 24 Sydney rock oysters
  • 2 tbsp Mirin
  • 2 tbsp sherry vinegar
  • 1 tsp finely chopped Thai red shallots
  • 1 tsp finely chopped ginger

METHOD

  1. Mix all the ingredients together except the oysters and place into a dipping sauce bowl.
  2. Serve the oysters over crushed ice. Garnish with rose petals, watercress and lemon wedges.
