Thai Beef Salad

INGREDIENTS

  • 500g lean beef fillet
  • 90g cherry tomatoes, halved
  • 4 red shallots, sliced
  • 2 green spring onions, sliced
  • 15–20g toasted chilli flakes
  • 1 cup fresh Thai basil
  • ½ cup fresh mint leaves
  • ½ cup coriander leaves
  • 60g snow pea sprouts, chopped

Dressing

  • 30g palm sugar, grated
  • 2 large limes, juiced
  • 2 tbsp fish sauce
  • 30ml regular soy sauce
  • Garnish with 2 tbsp peanuts, roasted and roughly chopped

METHOD

  1. Heat a grill until very hot. Brush fillet with oil and seal for a minute each side and leave to rest for 5 minutes. Then finely slice across the grain.
  2. Combine the tomatoes, shallots, spring onions, chilli flakes, basil, mint, coriander and snow pea sprouts in a large bowl.
  3. In a bowl, mix the sugar, lime juice, fish sauce and soy – whisk well.
  4. Put the beef slices into the dressing and let sit for 5 minutes.
  5. Add salad mix to the beef in the dressing and toss well and top with peanuts.
