Phil Ryan’s philosophy is that the first time Semillon should be exposed to air is when it’s opened. The Lovedale vines grow in ancient, very light soil that was once under the sea, giving the Semillon a beautiful minerality. The 100% handpicked fruit is CO2 gas covered through the process and whole bunch pressed. The juice is cold settled for two weeks before a neutral yeast is inoculated for fermentation.
Lemon zest, grapefruit and pea pod aromas lead to a pristine palate with elegant yet powerful layers of citrus with lovely texture, fresh balancing acidity and light notes of herb and snow pea on the long finish.
