Willow Bridge Estate has called this Sauvignon Blanc ‘Fumé’, which is French for ‘smoked’ as they wanted to separate it from the typical fresh and fruity Australian style. Taste the difference oak treatment makes.
Not your average Sauvignon Blanc, this wine was made with a special parcel of fruit from Pemberton. Half was vinified conventionally with a cool, clean tank fermentation, while the other half underwent a warm, natural fermentation in French oak (10% new) followed by regular lees stirring, adding layers of texture and complexity to the intense varietal fruit.
It has a very aromatic, floral and tropical nose with lifted toasty oak perfume. It’s showing terrific texture and balance from the barrel fermentation with a savoury core of ripe stonefruit and citrus enhanced by soft acidity. Silky and long with a great mouthfeel – a lovely alternative to mainstream examples.
