Lydney Milan's green beans with mustard lemon and mint

The perfect side dish for a barbeque or with a fish dish, try Lyndey Milan's green beans with mustard lemon and mint.

Ingredients 

300g green beans, trimmed

1 tbsp butter

Zest and juice of 1 small lemon

2 tsp Dijon mustard

Salt and freshly ground black pepper

1½ tbsp finely chopped mint

Method 

1. Cook beans in a medium saucepan of salted boiling water for 4–5 minutes or until tender crisp. Drain.

2. Melt butter in the saucepan over medium heat. Stir in the zest, juice, mustard, salt and pepper. Return the beans and toss together.

3. Serve immediately, scattered with mint,  alongside fish, chicken, meat or vegetarian main of your choice.
