Hoddles Creek Estate attributes the fresh, balanced characters of their wines to minimal intervention in the winemaking process. It’s certainly paid off in this complex yet balanced Chardonnay.
The fruit for this Chardonnay was gently destemmed, not crushed and pressed into tank. The juice was left to settle clear for seven days with no enzyme or acid addition. The wine was then fermented until dryness using cultured and natural yeasts. It remained in barrel for 12 months with occasional lees stirring.
Winemaker Franco D’Anna has created a wine with complex, lifted aromas of cashew, stonefruit, lees and oak. The plush, chewy and nutty palate has a tight core of white peach, citrus and melon. It’s complex yet balanced by firm acidity with terrific oak in support and will reward time in the cellar.
